Some tips for using your Emile Henry tajine:
Always start on low heat for the first 5 minutes to gradually increase the temperature. Do not heat the base of your empty tajine: always add a little water or oil. Make sure there is always juice in your tajine as you cook. If necessary, you can add a small glass of water. Keep the tajine closed while cooking; you can of course open it quickly to add more ingredients and spices.
