Manufactured in Japan, Global knives are unique in the world for their lightness, edge retention and razor-sharp edge. The blades are made of Molybdenum/Vanadium stainless steel, cold-tempered and hardened to Rockwell C56°- 58°, which allows for blades with superior edge retention to any other steel and resistant to rust, staining and corrosion. Like Samurai swords, each Global knife blade is carefully weighted to ensure perfect balance in the hand. The regular contours and seamless construction eliminate dirt grips, offering hygiene and safety. Just as swords distinguish a Samurai, Global knives distinguish the professional chef. The anatomical shape of the handle and the knife's light weight - about 30 per cent less than another knife - allow for long use and reduce user fatigue.
