The tajine is a traditional Moroccan stew dish. This cooking has responded to time, the need to cook without water: the tajine allows you to preserve the moisture of the food by dropping the steam coming from them thanks to the lid. The key to a good tajine is above all slow cooking over very low heat so that all the flavors are enhanced. Our tajine gently simmers meat, fish and vegetables, thanks to its conical lid that allows optimal water vapor circulation for a good stew cooking.
The Emile Henry Tajine is made of Flame ceramic, a natural and inert material that ensures healthy cooking of your dishes. It conducts heat gently and evenly to cook all ingredients. You can use it on a direct heat source (gas, electric, glass ceramic, with an induction relay disc) but also in the oven. The bowl is deep enough to hold all the ingredients in your tagine. Be sure to arrange the layers successively for optimal cooking:
- Food you place at the bottom will cook in the juices and require more cooking
- Food placed on top will steam, the more fragile food that requires less cooking will be well above.

Some tips for using your Emile Henry tagine:
Always start on low heat for the first 5 minutes to gradually increase the temperature. Do not heat the base of your empty tagine: always add a little water or oil. Make sure there is always juice in your tajine as you cook. If necessary, you can add a small glass of water. Keep the tagine closed while cooking, you can of course quickly open it to add more ingredients and spices.
