The G-5 has long been a customer favourite and one of the best-selling blades in the original Global series. A long, flat, rectangular blade with a slight knife edge. The G-5 Vegetable Knife with 18cm blade is inspired by the traditional Japanese Usaba knives, popular among professional chefs in the Tokyo area and specialised in vegetables. The idea behind the shape of the blade is to encourage an upward and downward chopping motion, in which the entire length of the blade makes contact with the cutting board and passes through the entire vegetable. There is no need to push and pull the knife horizontally during the chopping motion.
European cuisine tends to use a lot more chopped vegetables than Japanese cuisine and therefore this knife has always been preferred in Global’s sets. There are several variants of this knife within the Global range.
