BEFORE AND AFTER EACH USE
Wash with suitable detergents avoiding chlorine and bleach products, rinse and dry thoroughly. Then store them in a dry place. Do not use abrasive sponges or cloths. Remove residues of salt, lemon, vinegar, tomato-based sauces, etc. immediately. If a dishwasher is used, make sure that the treatment includes perfect drying and polishing and if not, do it manually. Knife blades are made of hardened martensitic 420 stainless steel which ensures the durability of the sharpening but makes the material more sensitive to corrosive attack. It is imperative that the knives are properly cleaned, washed and dried immediately after use.
