The medium-sized CHUTOH knife from Miyabi is ideal when you need to slice or cut meat or fish. The slim and stable 16 cm long blade ensures full control while working: working with precision is easy with this knife. That’s why it has convinced professional chefs around the world. The core of the blade is made of MC63 micro-carbide powder steel, surrounded by 100 layers of steel of two different hardnesses. The CRYODUR® blade also undergoes a special hardening process at -196 degrees Celsius, giving it a hardness of about 63 Rockwell. Honbazuke honing gives it a scalpel-like sharpness. This sharpening is achieved by grinding the blade twice between grinding wheels and then polishing it on a leather wheel. The handle has the traditional D shape of Japanese knives. This knife is comfortable to hold and is a real eye-catching tool, thanks to the Masur birch handle. Its delicate grain stands out from the floral damask pattern of the blade and creates a sophisticated contrast. Stainless steel recesses and subtle red lines create elegant decorative elements.
