The Capsule Collection is the brand new line of “Prêt à manger” Meal Kits! Dedicated to those who don’t want to give up a great gourmet dish, even if they don’t have much time (or desire) to cook. These are recipes that have as a common denominator a “treasure“, that is, the ingredient par excellence of the territory to which they belong, sublimely reinterpreted by the great Italian Star Chefs.
The “treasure” of this recipe is Barolo wine.
In this capsule you will find egg tagliatelle and ready-made sauce with sausage and Barolo wine by Andrea Larossa.
It is a dish from the culinary tradition of the Langhe, which Andrea has always loved to revisit in his innovative cuisine. With this recipe he has managed to make a sauce with powerful ingredients, such as pork sausage, Barolo wine, garlic and onion, elegant and extremely refined. The notes and aromas of this dish take you directly to the farmhouses of the 19th century Langhe farmers, among vineyards and farmyard animals, where this magnificent recipe was usually consumed on Sunday lunch.
How do you cook it? Cook the pasta and pour in the sauce. And that’s it!
THE PREPARATION
1. Pour 2.5 litres of water into a pot, add 25 g of coarse salt, bring to the boil.
2. When the water boils, throw in the egg tagliatelle and cook for 5 minutes.
3. In the meantime, pour the jar of sausage and Barolo sauce into a pan and heat gently over low heat for 2 minutes, then turn off the heat.
4. After 5 minutes, drain the egg tagliatelle, keeping a little of the cooking water.
5. Pour the tagliatelle into the pan with the sauce and mix everything well (if necessary, add a little cooking water to achieve the right level of creaminess).
PLATING
1. Use deep plates.
2. Take a ladle and a fork.
3. Use a fork to pick up a portion of tagliatelle from the pan and wrap it in the ladle to create the shape of a nest.
4. Gently place the nest in the center of the plate.
5. Finish the plate with a drizzle of extra virgin olive oil.
6. Wipe the edge of the plate with a cloth to remove any smudges.
