“L’Oro di Milano” (serves 4)
Carlo Cracco (6 Michelin Star Chef) creates this extraordinary reinterpretation of Risotto alla Milanese, a dish rooted in the history of Milanese cuisine and enriched with modern and refined flavors through the chef’s interpretation.
The original recipe, dating back to 1574, was born at the table of the glassmaker Valerio di Fiandra, a figure closely linked to Milanese tradition, who used saffron not only to embellish his dishes but also to give the stained-glass windows of Milan Cathedral an extraordinary color, a symbol of the masterful craftsmanship of the time.
Today, saffron, which has become one of the most iconic ingredients in Italian cuisine, continues to shine in this gastronomic creation, carrying with it the rich legacy of a historic dish.
“Il Tesoro di Portofino” (serves 2)
This is a marvelous risotto, inspired by Carlo’s new restaurant in the stunning setting of Portofino. The ready-made sauce is an absolute spectacle, combining the tender notes of baby squid with the crisp hints of ginger essential oil and the savory accents of nori seaweed.
All wrapped in a velvety embrace of mascarpone and shallots. The squid ink is the perfect topping, both aesthetically and in terms of final flavor.
