The Capsule Collection is the brand new line of Meal Kits “Prêt à manger”! Dedicated to those who do not want to give up a great gourmet dish, even if they do not have much time (or desire) to cook. These are recipes that have as a common denominator a “treasure“, that is, the ingredient par excellence of the territory to which they belong, reinterpreted in a sublime way by the great Italian Star Chefs.
A traditional dish from Puglia as rich as the history of this ancient and evocative land. An embrace between land and sea sealed by the strong flavor of spinach, sweetened by courgettes, all wrapped up in the marine flavor of fish broth, clams and sauce with salicornia inside, a very sought-after and edible succulent plant. A sublime dish with authentic and unexpected flavours where theGarofalo Linguine, Gragnano PGI pasta, are perfect with vegetable and fish-based sauces.
THE PREPARATION
1. Pour 3 litres of water into a pan, add 25 g of coarse salt, bring to the boil.
2. When the water boils, throw in the Garofalo Linguine and cook for 10 minutes.
3. In the meantime, pour the jar of courgette, clam and salicornia sauce into a pan with the heat off.
4. After 10 minutes, drain the Garofalo Linguine, keeping a little of the cooking water.
5. Pour the Garofalo Linguine into the pan with the sauce and mix everything well with the heat off (if necessary, add a little cooking water to achieve the right level of creaminess).
PLATING
1. Use deep plates.
2. Take a ladle and a fork.
3. Use a fork to pick up a portion of Garofalo Linguine from the pan and wrap it in the ladle to create the shape of a nest.
4. Gently place the nest in the center of the plate.
5. Decorate the plate by putting the spinach powder in a colander and distributing it in a spot on the linguine, according to your aesthetic sense.
6. Finishing touch: if you have a lemon, grate a little zest on each plate to add a touch of freshness.
7. Wipe the edge of the plate with a cloth to remove any smudges.
