The Yaxell Super Gou santoku 16.5 cm<\/strong> is a practical and elegant Japanese chef’s knife with a special blade. The santoku is the Japanese version of the chef’s knife. The small blade is perfect for chopping vegetables, meat, fish, onions, garlic and, of course, different types of herbs.<\/p>\n

Yaxell Super Gou blade: 161 layers of damascus steel<\/strong>
\nYaxell Super Gou kitchen knives are made from 161 layers of Damascus steel. An odd quantity? Not at all! This is because each side of the blade has 80 layers of stainless Damascus steel, between which is a rock-hard SG2 powder steel core. This combination makes the knives razor-sharp, stainless and dazzlingly beautiful.<\/p>\n

Damascus steel is composed of two stainless steels that are forged together in layers. These two types of steel have a different carbon content, which causes the steel to change colour differently depending on how it is engraved. By etching, a pattern is produced in the steel with the help of an acid. Stainless steel, whether Damascus or not, is usually not the hardest type of steel. That is why a core of SG2 pulverised steel was added. The result is a rock-solid edge with a hardness of 63 HRC! The name of the collection is hand-engraved on the side of the blade and on the back of the handle.<\/p>\n

Yaxell Super Gou handle<\/strong>
\nBecause of the round shapes and the three rivets, this handle looks very much like that of a European kitchen knife. This ensures that the handle is not only solid but also comfortable. The handle is made of red and black micarta. Micarta is a material made of flax, impregnated with epoxy resin. This makes it a very strong material. It can withstand almost anything and has great water resistance. Micarta is known to offer a lot of grip. Even when wet.
